For The Reading Guy's birthday dinner, his one request was that I
not have to be in the kitchen during the party! So, we decided to
just serve some simple pintxos that could be made a little ahead of
time and that would allow everyone to pick and choose what
they wanted to munch on. Here's a little TASTE (get it, TASTE?)
of what was on the menu for the big night and a few simple recipes
that you can whip up yourself when you're in a pinch...
We made a simple red pepper hummus for the
multiple vegetarians in attendance; it is really
easy to make and always a crowd pleaser.
Place one can of garbanzo beans and a few roasted
red bell pepper slices in a food processor and mix
until well blended. Then place one crushed garlic
and a tablespoon of olive oil in a pan until golden,
and add garbanzo mixture to saute for 5 minutes.
We also served an anchovy ceviche--a total fave of
The Reading Guy since we have been living here
in 'anchovy heaven.' It is also really easy to make:
mix freshly chopped cherry tomatoes, onion, and
parsley with a good amount of vinegared anchovies,
and serve on toasted bread. Told ya' it was easy!
The Bonito Salad that we served was equally well
received! Bonito is a superior Spanish equivalent of
tuna that my Sweetheart swears tastes so much better
that the canned American version. To make the salad
we mixed bonito with mayonnaise, mustard, pepper,
chopped tomatoes, pickles and onion...
We also made a cute vegetable Christmas tree using
broccoli, tomatoes, carrots, cheese, pretzels and a
cream cheese dip--our guests almost didn't want to
dig in to this cutie...
We served 'jamon iberico' with a local cheese on toasted bread...
And a yummy traditional 'tortilla de patata'
cut in to bite-sized pieces...
I had originally been worried--thinking I had made
WAY TOO MUCH FOOD...
But by the end of the evening, I was so relieved to have a table
covered in empty plates and a room full of happy tummies...
